Instructions
- Using an immersion blender, combine sodium alginate and distilled water in a large airtight bowl.
- Let the bath sit for 1-24 hours so the bubbles dissipate.
- Create the cocktail (with or without alcohol) and blend in the calcium lactate.
- Freeze the cocktail in ice cube trays.
- Warm the sodium alginate bath to about 120°F and prepare two bowls of cold water.
- Drop one frozen cocktail pod into the sodium alginate bath and gently stir until the membrane forms.
- Lift the pod with a slotted spoon, wipe it, and transfer it to the first cold water bath.
- Rinse thoroughly, repeat in the second bath, then serve or store in a mason jar with holding liquid made from the cocktail minus the calcium.
